Jefferson spent the last five seasons with the Razorbacks, setting school records for passing yards (7,911) and passing touchdowns (67) while appearing in 45 games. He also rushed for 1,876 yards and 21 scores.
The 22-year-old threw for 45 scores against just nine picks in 2021-22, but his numbers dipped slightly this season. Jefferson finished with 2,107 yards and 19 touchdowns against eight interceptions while Arkansas struggled to a 4-8 record.
UCF previously pursued other quarterbacks in the portal with two-year starter John Rhys Plumlee graduating but ultimately lost out on Tyler Shough and Grayson McCall to Louisville and NC State, respectively.
